Le nostre "Orecchiette" sono una vera opera d'arte creata da grano duro selezionato con un alto valore proteico del 13% e grazie all'arte pastificatoria prende vita la Tradizionale "LaGranum".
La Pastifichiamo ad un altitudine di 700m. s.l.m. entro 72 ore dalla molitura del grano duro per ottenere la semola, questo per garantire tutte le proprietà organolettiche ed i profumi dei nostri pregiati grani italiani. Misceliamo la semola con acqua di montagna e trafilamo al bronzo, per la fase di essiccazione utilizziamo una bassa temperatura e modalità statica per 12/36 ore (in base al formato), il risultato è una pasta ruvida e porosa che trattiene bene il sugo come vuole la tradizione italiana, una pasta in grado di garantire le migliori performance di cottura.
Se ami le orecchiette, falle avvolgere dai sughi e ti doneranno un retrogusto amabile e saporito.
