🌾 Filiera agricola diretta e biologica
Coltiviamo questo grano a oltre 1000 metri di altitudine sull’Appennino modenese, su terreni lasciati incolti per più di 50 anni. Il metodo è biologico certificato, rispettoso del suolo e della biodiversità.
⚙️ Lavorazione artigianale
La semola integrale viene molita a pietra e lavorata entro pochi giorni dai nostri mastri pastai, che realizzano una pasta ad alto valore nutrizionale, altamente digeribile e con un gusto autentico e rustico.
L’essiccazione lenta e a bassa temperatura ne preserva tutte le proprietà.
