Il Khorasan è un antico grano (detto anche turanico, lo stesso del Kamut®, che però è canadese) introdotto in Italia nel 400 d.C. e coltivato per secoli nel nostro Paese.
Abbiamo ritrovato questa varietà da un contadino che le coltiva da generazioni e seminata a oltre 1000 metri sull’Appennino modenese su un terreno lasciato incolto per oltre 50 anni.
Moliamo questo meraviglioso grano nel mulino a pietra della nostra filiera e dopo pochi giorni lo consegnamo ai mastri pastai che portano nella tua tavola una pasta dagli alti valori nutrizionali e altamente digeribile rispetto al frumento classico, grazie ad una attenta lavorazione unita ad un’essiccazione a bassa temperatura.
